Super Bowl XLIV


Well the game is set. Share who you are routing for and share 1 recipe you will have for the Super Bowl.

    Spinach and Artichoke Dip


    * 1/2 cup grated romano cheese (2 oz)
    * 1 clove garlic, peeled
    * 10 ounces frozen chopped spinach, thawed and squeezed dry
    * 1 (6 1/2 ounce) jar marinated artichoke hearts, drained
    * 8 ounces soft garlic-chive cream cheese
    * 2 large eggs
    * 4 ounces shredded mozzarella cheese


    1.Preheat oven to 375°F.
    2.Place Romano cheese in a food processor.
    3.While running, drop garlic in the feed tube.
    4.Start the machine and add spinach, artichokes, cream cheese and eggs, process until thoroughly blended.
    5.Turn into a casserole dish and fold in Mozzarela.
    6.Bake 20-25 minutes or until heated through.

I am routing for New Orleans – never been to super bowl, really like reggie bush and drew brees, would be good for new orleans, have a special friend in new orleans and lastly they are in the same league as carolina so that says alot about our division! here is my recipe (this is a recipe that Joe & Debbie had at Deebird’s graduation party and everyone loved it):

    Joe & Debbie Pepperoni Spread

    “Big” log of goat cheese
    1-1 1/2 blocks of cream cheese (these are Joe’s measurements haha)
    2 sticks of pepperoni (not hormel slices)
    Jar of ragu pizza sauce
    Can of tomato paste

    Mix goat cheese and cream cheese and put in fridge. Quarter pepperoni and fry in pan. Drain grease.In saucepan mix sauce & tomato paste. Then add pepperoni and spices (basil, oregano, parsley, garlic salt etc) Simmer to taste. Take cheese out of fridge and warm tp room temp. Coo sauce and pour over cheese. Serve with baguettes, crackers etc

    Great super bowl appetizer!
