It’s wonderful to see so many entires- like Christmas morning (almost).

Well once again today was weight watchers day- another 5.2 for a total of 17.4 pounds. My newest thing is exercise (which isn’t all that bad). I even found that I can jog a little. The biggest problem is the foot I broke- it swells but I’m doing 45 minutes a day of bike and walk/jogging (put on some funky music and move this white body). I’ve been thinking lately and wondering why I ever got out of shape- how dumb because now you have to work like hell to get it back. I’m sure once I do I’ll be excited but now I just have to get through the Holidays.

Major deadlines here, along with major company downsizing! I could be in danger, but I think I’ll be okay. Some people are not happy with our department because it’s taken us so long to produce training, but they do not understand how long it takes. We’ve been working our butts off, trying to prove ourselves (or rather our department’s worth). If we don’t do this, all of us could lose our jobs and I’m not willing to go down like that. Right now I’ve been trying to light a few fires under a few people’s butts, and it was funny because the other day we had a little meeting and I started to get on my boss’s and another co-worker’s nerves because I was pushing so hard. Our dept. boss (over my boss), came and told me that she respected the way that I was keeping everyone on track and that she thinks I’m a lot like her! She says that she knows I’ll go far in this company.


This is a recipe I found on the internet and modified a little. It’s excellent and is now my favorite rice recipe, next to David’s Arroz con Gondules (recipe coming soon).

Mushroom Rice

2 cups of rice
3 cups water
4 Tbsp. of oil
1/2 teaspoon of salt
1 cup of mushrooms
4 tsp. of soy sauce
1 onion
3 Tbsp. of butter

Start by making the white rice. Heat up the 3 cups of water and add the salt and 4 Tbsp. of oil (which makes the rice soft and fluffy) and salt. Bring to a boil and then add the rice, stirring regularly to avoid excessive sticking. When all the water has evaporated cover with a tight fitting lid and simmer in very low heat. Wait 15 minutes and remove lid, stir, and cover again. In 5 minutes the rice should be firm but tender inside. If necessary, cover and leave another 5 minutes on very low heat.

Slice the mushrooms. Sauté all the remaining ingredients (except the rice) using the butter. Adjust salt to taste. Add four cups of cooked white rice and mix all the ingredients. Fluff the rice using a fork. Serve hot.


Hello to all! Sorry you haven’t heard from us in a long time but that is not to say that i don’t check the site. Kenny is miserable as usual- no just kidding! he’s really busy at work, tis the season.Kameron had his first overnight friend Friday night. He was so excited.He also has lost another tooth,bottom front.Football went great and he’s got anpther trophy.School is coming along for me and i will be anxious to get this semester over with.well gotta run.susie


I would just like to let you all know that I made Erin’s recipe for fiesta lasagna last night (it is in our cookbooks) and it was very very good! It is like lasagna, but it is Mexican style, so instead of red sauce, you have salsa, instead of mozzarella, you have cheddar, instead of noodles, you have tortillas.

It was very good and I recommend that you all try it!


Yes, I thought Rochester was a fairly safe place… now my opinion is changing. After my friend Val was car jacked (yes, jacked, not stolen), I questioned it, but now I’m definitely weary.

We just wanted to say hello. I don’t get on very often because I am extremely busy at work and usually don’t have access at night (deebird!). Everyone is doing great and the big “D” is now 13.God help me! She is growing more beautiful everyday.

Matty is still a ball of sunshine. She is full of love and is my buddy at night. She is doing a whole lot better in school and has brought her two bad grades up a level (actually one of them went up two levels).

Both are doing well in soccer. Matty won her Myrtle Beach tournament – she scored a goal in every game (in one game it was the only goal scored!!) Erin went with me to that tournament and got to witness the happy bug herself.

Darian’s team is 6-1-1 and in second place by one point. She is playing absolutely fantastic. Although she is not a goal scorer almost every one of the goals her team scores she is the assistant. I call her the playmaker!

Lastly – we had dinner last night with Ashley. She is doing well and her son is absolutely beautiful. She is getting married next October if she and Jimmy (her fiance who looks just like Christopher!) save enough money. She is an assistant nurse at Carolinas Medical Center. She looks real good, more like a Mom than a young adult. She seems happy. Jimmy has a lot of family around and they are close. Ashley was excited to see us and hopes she can stay in touch. She wants nothing to do with Mike but she says she is not angry anymore. She is coming to Darian’s BD party saturday.We all feel better because we have set things straight and now I don’t feel like I gave up on her. Hope for the best.

Well last night was weigh in at weight watchers- another 5.8 for a total of 12.2 in two weeks. Too bad it won’t stay this high! Anyone want to share their successes? I know many are trying to get in shape- lets encourage each other.

Ever had one of those days! It’s Monday and already feels like a full week. I taught this evening, have a PTA presentation tomorrow, and Wednesday & Thursday is parent teacher conferences so I work late.This is just the night schedule- days are full too. Thank goodness I have Friday off!

I guess here is my plug to say- I know everyone is busy but I hope we hear from people- keep us updated on what’s going on in your lives, comment on what we say here, send in a quote or picture- anything- this is a place to share and talk and laugh and we miss hearing from people.

Well I am running out of current photos of family so I guess I’ll just have to come home and take some more….I’m planning to come home Christmas day (around 4) and stay until Sunday (29). Linda and I will do Christmas on Christmas Eve (still send gifts to Kansas City- I’m traveling light) and we will spend New Year’s together (Linda works Christmas Day).

I also couldn’t wait 6 months to see Delaney (I got extra film!)
It will be short and sweet but the important thing is sweet!

Well we have a new driver in the family- Nick turned 16 on November 30 (sorry I didn’t get this up yesterday-worked late) so better late then never- give Mr. Nick a big birthday wish.
