My New Superfood Salad – SO GOOD!

1555392_620334471383811_985339181_nHi everyone! I came up with a new salad I wanted to share with everyone. They sell a similar salad at CostCo and Sam’s and I decided to try and make it myself… it’s even better! Just wanted to share because I cannot stop eating it. It is best to let the dressing sit overnight so the tartness of the lemon mellows. In a pinch, you can substitute a poppyseed or sweet white balsamic vinaigrette.

Superfood Salad:

2 cups kale, stems removed & chopped fine
1 cup purple cabbage, sliced thin
1 cup green cabbage, sliced thin
1 cup broccoli, chopped fine
1 cup Brussels sprouts, sliced thin
1/3 cup red onion, sliced thin
1/3 cup slivered almonds
1/3 cup dried cranberries

1 Tbsp. Italian seasoning (I use my own that I make)
1/4 cup fresh lemon juice (2 small lemons)
2 Tbsp. Honey
2 Tbsp. plain Greek yogurt (or mayo or sour cream)
3/4 cup vegetable oil

Make dressing and set aside. It is best to let the dressing rest a day so the flavors mellow. It can be a little tart when freshly made.

Rinse and chop all ingredients and add to a bowl.

Serve with dressing and enjoy.
