Hatch Chili time…



Roast & peel


When they are cleaned-cut up and freeze. I add these to chili all winter for a wonderful flavor. They are suppose to be in Wegman’s- give them a try (come in mild and hot).

Hatch Chile con Queso


1 tsp olive oil
1/4 cup white onion (chopped)
1 clove garlic (minced)
2 Hatch Green Chiles (roasted, chopped, skin, seeds, and stems removed; if using canned, drain well)
6 tbsps milk
8 ozs American cheese (white, shredded)
2 ozs jack cheese (Monterrey, shredded)
