Erin’s Eating Plan for Week Ending 08-15-15

This plan has a lot of repeats because of the produce I have from the CSA and limited recipes (for things like okra)… peaches, okra, tomatoes, cantaloupe, eggplant, green beans.

This weeks meal plan includes some of the following:

  • SMOOTHIES: Peach-Strawberry Smoothie, Peach Pie Smoothie, Orange Smoothie, and a Hot Pink Smoothie (with beets, strawberries and carrots)
    OR 3/4 cup plain Greek yogurt with 1 cup of fruit and honey or Stevia
  • BREAKFASTS: Mini Quiches made in muffin tins, half a whole wheat bagel with cream cheese
  • SALADS: Fiesta Mexi Salad with Avocado dressing, Egg Spinach Salad with faux-bacon dressing, Peach Spinach Salad with candied pecans, and a Mixed Green Salad with Jicama and Cilantro-Lime Vinaigrette
  • SNACKS: Carrot sticks, Cantaloupe, Peaches, Cottage Cheese with Indian Chutney, Cookie Dough Greek Yogurt
  • DINNERS: Okra Creole with White Rice, Nana’s Green Bean Salad with 6-8 sauteed shrimp, Vegetable Curry with Shrimp or Tofu, Veg Pasta e Fagiole
