I’m still heavy in peaches, cantaloupe, okra and eggplant from my CSA, but I finally got some more tomatoes and Green Beans too! You’ll see these reflected in my week’s meal plan.
This weeks meal plan includes some of the following:
- SMOOTHIES: Peach-Strawberry, Blueberry-Banana, Strawberry and Orange Smoothies
- SALADS: Italian Salad, Egg Spinach Salad with faux-bacon dressing, Peach Spinach Salad with candied pecans, and a Mixed Green Salad with Jicama and Cilantro-Lime Vinaigrette, Caprese Salad
- SNACKS: Ina Garten’s Eggplant Dip with Pita Bread wedges, Cottage Cheese with Indian Chutney
- DINNERS: Okra Creole with White Rice, Nana’s Green Bean Salad with 6-8 sauteed shrimp, Panzanella with Grilled Eggplant, Curry with Shrimp or Tofu
