Meet Pepe. He was our adventure guide in Cozumel when we snorkeled in brackish water (where the salt water and fresh water meet) and also when we explored the underground river. Since these items were in water, we did not get photos but we did have fun (except the cave with the bats… my mom was terrified). Our adventure also included a trip to Wah Wah Beach Bar for a few drinks and an authentic buffet of cheese quesadillas, potato taquitos, tacos, guacamole and an amazing ceviche!
I loved the ceviche so much that I came home and made one with shrimp.
Shrimp Ceviche:
½ cup fresh lime juice
1 lb. cooked medium shrimp, peeled and deveined, coarsely chopped
½ medium red onion, finely chopped
2 medium Serrano chiles (or jalapenos), seeded and deveined, finely chopped (optional)
1 medium tomato, finely chopped
2 Tbsp. finely chopped fresh cilantro
2 Tbsp. homemade sofrito (optional)
1.2 tsp. cumin
¼ tsp. sea salt
- Combine lime juice and shrimp in a medium bowl; mix well. Marinate, covered, in the refrigerator overnight.
- Combine shrimp mixture, onion, chiles (if desired), and tomato in a large bowl; mix well.
- Add cilantro and salt; toss gently to blend.
- Serve with chips or have on tacos with some lettuce, avocado and hot sauce.
While we were on our cruise, we took an excursion to Grand Cayman to swim with the Stingrays. This was the only thing my mom wanted to do on this trip, so we made sure to take her. She absolutely loved it, and so did we (although I was a bit timid). I finally uploaded these to FlickR for anyone that wants to see them. 🙂
Yes, she is the most beautiful baby in the world… and she has the best personality, keeps herself busy for long periods of time and knows how to use her tongue!
We made it to the beach…vision from nightly walk…
We went up to the river for some quiet…came home early because a big storm was forecasted to hit tonight (flooding, hail) we didn’t want to be in it.
The river was up again- last weeks wind storm blew down the “Bear Tree” smashing the water and outdoor sink- Lloyd had to fix them during the week because the whole property was with out water. If we were there- it would have missed us by 2 feet!
We did get to have our first camp fire- and we did a lot of grilling this trip.
Our first step toward retirement and to the next 25 years… we are going to do some traveling! (Plus we have a barn to store it!)
Kris is coming to Kansas City from Indianapolis- they send her to Detroit- to a scheduled flight but don’t schedule any pilots- NEW KIND OF DUMB! So they cancel the flight.Oh yes- tomorrow she get s to fly to Minneapolis then Kansas City because all the direct flights are at night.Who runs this company (some CEO who makes lots of money while screwing the hard working man).
She misses a business meeting and Delta wonders why they suck?
Some winter weather is moving in- if she doesn’t get out tomorrow she will end up going home and our super bowl party will be cancelled. YES DELTA-YOU SUCK!!!
Let’s not fly Delta- maybe we can influence their bottom line.
She is save and sound in my home- tired (didn’t get to hotel until after midnight) and does finally have her bag (it flew out last night somehow). She is resting, cleaning up and eating while I finish work.
In last year’s airline index, Delta was ranked fifth out of the seven major airlines on the list. But its acquisition of last year’s worst airline, Northwest, didn’t do its index score any favors. Delta’s customer satisfaction index dropped a whopping 9.7% from last year. And since ACSI began keeping score in 1995, Delta has sunk an amazing 27.3%.
On Jeopardy the other night, the final question was:
How many steps does the guard take during his walk across the tomb of the Unknowns?
All three missed it …
The answer:
21 steps. It alludes to the twenty-one gun salute, which is the highest honor given any military or foreign dignitary.
